I hope everyone had an amazing Christmas holiday! I know we did!
I'm sharing a quick post with you today with an awesome, quick and easy banana bread recipe. The best part is that you should have all the ingredients you need already at home! I always try to keep some type of fresh fruit in the house, especially bananas. I feel like people forget about bananas lol but I always seem to have some on the counter.
The hard part about keeping bananas with just two of us in the house is eating them all before they start to overripe. I really hate to throw food away and always try to find a way to eat everything I buy at the grocery store as to not waste good food! I always seem to forget what to do with bananas once the get to the point where we don't exactly want to peel and eat them anymore. I finally got smart and realized I can start making banana bread on a weekly or bi-weekly basis with the bananas we don't eat! I got even more excited because who doesn't love banana bread?! I probably like them better than just bananas on their own! I like to experiment with my recipes so I usually play around and add cinnamon, or nutmeg to spice things up!
Anyways - the next time you catch yourself wondering what to do what that leftover fruit - whip this up!
2-3 very ripe bananas, peeled and mashed
1/3 cup melted butter
1 tsp baking soda
pinch of salt
1 cup sugar
1 large egg beaten
1 tsp vanilla
1/2 tsp cinnamon or nutmeg
1 1/2 cups all-purpose flour
*pre-heat oven to 350 degrees
1. In large mixing bowl - mash those bananas
2. add butter
3. mix in baking soda, salt, and spices
4. Stir in sugar, egg, and vanilla
5. Gradually mix in flour
6. Mix on medium speed with hand mixer
7. Pour into a greased loaf pan and pop in the oven for 50 minutes or so - test with toothpick, let cool and enjoy!
Couldn't be any easier. I am probably going to start buying too many bananas just for excuses to make more banana bread!
