Summer Salad Recipe

I hope you are all having a lovely 4th of July weekend! We've enjoyed a lazy weekend with no plans :) 

 

I wanted to share a quick post with you on the yummy and healthy summer salad! If you are still searching Pinterest for a dish to bring to a 4th of July celebration tomorrow, look no further!

I came across a variation of this salad at a corporate event I planned in early June.  At first I didn't like the sound of all the ingredients together, but once I tasted a bite, it was delicious! It's the perfect combination of sweet and savory.  The best part is that it is SUPER easy to make, no cooking or baking required, and WATERMELON is involved! Who doesn't like a sweet watermelon in the summertime?

INGREDIENTS:

1 seedless watermelon (4 cups, or more or less depending on your taste and serving sizes)

1 red onion ( you don't have to use the entire onion, I chopped the whole thing and then eyeballed how much I wanted in the salad)

-2 cucumbers (I sliced one and diced the other for some variation)

-2 cups Feta Cheese

 

DRESSING:

-2 TBS or so of lime juice

-2 TBS or so of honey

*You can also use a balsamic, red wine, or strawberry vinaigrette depending on your taste! I love the honey lime dressing the best :)

 

 

INSTRUCTIONS: Cube watermelon, slice and dice cucumber, dice red onion and combine in a large serving bowl.  In a separate bowl, combine honey and lime juice and whisk together. Pour over your fruit and vegetable mix and toss in feta cheese. Chill before serving!

 

IT'S truly that easy!!
