Southern Stuffed Eggs
I wanted to share a quick blog post with you about my favorite stuffed eggs recipe! These eggs are AMAZING and are a fun southern spin on the traditional recipe. I wanted to share this with you guys in case anyone wanted to make them tomorrow for their Easter lunch or dinner! They are super easy and I'll even share my hard boiled eggs tips :). I believe my dad found this recipe in a magazine a few years ago and we have made them for Easter every year since, we loved them so much! (of course my mom always makes traditional eggs as well sometimes too!)
-12 eggs (I usually buy 18 to allow for a few extras for do-overs)
-1 small ripe avocado ( I usually choose a bigger one because I like more avocado!)
-2 green onions, finely chopped (FINELY CHOPPED!)
-2 TBSP sweet pickle juice
-1 TBSP mayonnaise
-1 TBSP dry ranch dressing mix
-1/2 tsp chili powder (optional)
-1/2 cup mild salsa for topping
PERFECT BOILED EGGS:
-Place your eggs in a single layer in a large saucepan
-cover with water and put on stove and bring to a rolling boil
-When your water comes to a boil, cover with lid and remove from heat - let it stand for 12 minutes
-Drain and return your eggs to the pan and cover with cold water and ice. Let them cool for a few minutes
-Once cool, run under a light stream of cold water while you peel them, start by tapping lightly on your counter - it's best to start from the wider part of the egg!
Once you have peeled your eggs, slice them in half and remove the yolks. Mash them together with the avocado. MASH IT GOOD!
Once mashed thoroughly add the rest of the ingredients.
Get ready to stuff your eggs! *TIP* - fill a large ziplock bag with your mixture and snip a corner off the end. Use like a piping back and stuff your eggs! Makes for an easy filling with no mess!
Top with chili powder and a little bit of salsa and voila!
